Ingredients
– 1 pre-made pie crust
– 6 large eggs
– 1 cup heavy cream
– 1/2 cup whole milk
– 1/2 teaspoon salt
– 1/4 teaspoon black pepper
– 2 tablespoons unsalted butter
– 2 tablespoons all-purpose flour
– 1 cup warm milk
– 2 egg yolks
– 1 tablespoon lemon juice
– 1/4 teaspoon cayenne pepper
Instructions
1. Preheat your oven to 375°F (190°C).
2. Roll out the pie crust and press it into a 9-inch pie dish. Crimp the edges and prick the bottom with a fork. Bake the crust for 10 minutes, then let it cool.
3. In a large bowl, whisk together the 6 eggs, heavy cream, milk, salt, and black pepper until well combined.
4. Pour the egg mixture into the pre-baked pie crust.
5. Bake the quiche for 35-40 minutes, or until the center is set and the top is lightly golden.
6. While the quiche is baking, prepare the Hollandaise sauce. In a saucepan, melt the butter over medium heat. Whisk in the flour and cook for 1 minute.
7. Gradually whisk in the warm milk and cook, stirring constantly, until the sauce thickens, about 5 minutes.
8. Remove the pan from the heat and whisk in the egg yolks, lemon juice, and cayenne pepper. Season with additional salt and pepper to taste.
9. Serve the Eggs Benedict Quiche warm, with the Hollandaise sauce drizzled over the top.
Notes
For a richer flavor, you can add a sprinkle of grated Parmesan cheese to the quiche filling. You can also top the quiche with crumbled bacon or ham for a heartier dish.
