Ingredients

– 1 (15-ounce) can chickpeas, drained and rinsed

– 1 small onion, finely chopped

– 3 garlic cloves, minced

– 1 teaspoon ground cumin

– 1 teaspoon ground coriander

– 1/2 teaspoon baking powder

– 1/4 cup all-purpose flour

– 1/4 cup water

– 1/4 teaspoon salt

– 2 tablespoons olive oil


Instructions

– In a food processor, combine the drained and rinsed chickpeas, onion, garlic, cumin, coriander, baking powder, flour, water, and salt. Pulse until a coarse paste forms, being careful not to overmix.

– Preheat a waffle iron and lightly grease it with nonstick cooking spray or oil.

– Scoop about 1/4 cup of the falafel mixture onto the hot waffle iron and cook for 4-5 minutes, or until golden brown and crispy.

– Repeat with the remaining falafel mixture, cooking the waffles in batches.
