Embrace the flavors of fall with this magical 30-minute Fall Apple Cider Stew Mash. This cozy and comforting one-pot dish is the perfect way to warm up on a chilly evening, featuring tender chunks of apple, savory broth, and a creamy mashed potato topping.


Ingredients

– 3 lbs Yukon Gold potatoes, peeled and cubed

– 4 cups apple cider

– 2 large apples, peeled, cored, and diced

– 1 onion, diced

– 2 cloves garlic, minced

– 2 tbsp butter

– 1 tsp dried thyme

– 1 tsp salt

– 1/2 tsp black pepper


Instructions

1. – In a large pot, bring the apple cider to a boil over high heat. Add the diced apples and onion, and cook for 10-12 minutes, until tender.

2. – Drain the apples and onions, reserving the cider. Mash the apples and onions with a potato masher or fork.

3. – In the same pot, bring the reserved cider back to a boil. Add the cubed potatoes and cook for 15-18 minutes, until fork-tender.

4. – Drain the potatoes and return them to the pot. Add the mashed apple-onion mixture, butter, thyme, salt, and pepper. Mash everything together until well combined and creamy.

5. – Serve the Fall Apple Cider Stew Mash warm, garnished with extra thyme if desired. Enjoy!

Notes

For a thicker stew, you can simmer the mixture for a few extra minutes after mashing. Feel free to use a mix of apples, such as Gala and Granny Smith, for a balance of sweetness and tartness.
