Ingredients

– 3 cups rolled oats

– 1 cup mixed nuts (such as almonds, pecans, and walnuts), chopped

– 1/2 cup shredded coconut

– 1/4 cup pumpkin seeds

– 1/4 cup sunflower seeds

– 1 teaspoon ground cinnamon

– 1/2 teaspoon ground ginger

– 1/4 teaspoon ground nutmeg

– 1/4 teaspoon salt

– 1/3 cup maple syrup

– 1/4 cup coconut oil, melted

– 1 teaspoon vanilla extract


Instructions

1. – Preheat the oven to 325°F (165°C).

2. – In a large mixing bowl, combine the rolled oats, chopped nuts, shredded coconut, pumpkin seeds, sunflower seeds, cinnamon, ginger, nutmeg, and salt. Stir to mix well.

3. – In a small bowl, whisk together the maple syrup, melted coconut oil, and vanilla extract.

4. – Pour the maple syrup mixture over the dry ingredients and stir until everything is evenly coated.

5. – Spread the granola mixture in a single layer on a large baking sheet lined with parchment paper.

6. – Bake for 15-20 minutes, stirring halfway, until the granola is golden brown and fragrant.

7. – Remove the granola from the oven and let it cool completely on the baking sheet. The granola will continue to crisp up as it cools.

8. – Once cooled, transfer the granola to an airtight container for storage.

Notes

– For chunkier granola, press the mixture down slightly before baking.

– Add in your favorite dried fruits, such as cranberries, apples, or figs, after baking.

– Substitute the nuts and seeds with your preferred mix-ins.
