Description

Indulge in the vibrant flavors of autumn with this delicious Fall Harvest Salad. Featuring a tangy apple cider vinaigrette, this nourishing and easy-to-make recipe is perfect for cozy weeknight dinners.

Ingredients

– 6 cups mixed greens

– 2 cups roasted root vegetables (such as sweet potatoes, carrots, and beets)

– 1 crisp apple, sliced

– 1/4 cup crumbled feta cheese

– 2 tablespoons chopped toasted pecans

– 1/4 cup apple cider vinegar

– 2 tablespoons olive oil

– 1 tablespoon Dijon mustard

– 1 tablespoon honey

– 1 clove garlic, minced

– Salt and pepper to taste

Instructions

1. 1. Preheat your oven to 400°F (200°C). Roast the root vegetables until tender and caramelized, about 25-30 minutes.

2. 2. In a large salad bowl, combine the mixed greens, roasted root vegetables, sliced apple, feta cheese, and toasted pecans.

3. 3. In a small bowl, whisk together the apple cider vinegar, olive oil, Dijon mustard, honey, and minced garlic. Season with salt and pepper to taste.

4. 4. Drizzle the apple cider vinaigrette over the salad and toss gently to coat.

5. 5. Serve the Fall Harvest Salad immediately, and enjoy the perfect balance of flavors and textures.

Notes

For a heartier meal, you can add grilled chicken or roasted chickpeas to the salad. The vinaigrette can be made in advance and stored in the refrigerator for up to 1 week.
