Description

Ingredients

– 2 cups all-purpose flour

– 1/2 teaspoon salt

– 1 cup unsalted butter, softened

– 3/4 cup granulated sugar

– 1 egg

– 1 teaspoon vanilla extract

– 1 cup chopped fresh figs

– 2 tablespoons honey


Instructions

1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.

2. In a medium bowl, whisk together the flour and salt. Set aside.

3. In a large bowl, cream the butter and sugar until light and fluffy, about 2-3 minutes. Beat in the egg and vanilla extract until well combined.

4. Gradually add the dry ingredients to the wet ingredients, mixing until a dough forms.

5. On a lightly floured surface, roll the dough out to a 1/4-inch thickness.

6. In a small bowl, mix the chopped figs and honey.

7. Spread the fig mixture evenly over the dough, leaving a 1/2-inch border.

8. Carefully roll the dough into a log, starting from the long side. Pinch the seam to seal.

9. Slice the log into 1-inch thick cookies and place them on the prepared baking sheet, spacing them about 2 inches apart.

10. Bake for 12-15 minutes, or until the cookies are lightly golden.

11. Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.

Notes

For a sweeter filling, you can add a tablespoon of brown sugar to the fig mixture. These cookies can be stored in an airtight container at room temperature for up to 5 days.
