Ingredients

– 3 large cucumbers, smashed and cut into 1-inch pieces

– 2 tablespoons rice vinegar

– 1 tablespoon sesame oil

– 1 tablespoon soy sauce

– 1 teaspoon chili garlic sauce (or more to taste)

– 1 teaspoon toasted sesame seeds

– 2 tablespoons chopped fresh cilantro

– Salt and pepper to taste


Instructions

1. In a large bowl, combine the smashed and cut cucumbers.

2. In a small bowl, whisk together the rice vinegar, sesame oil, soy sauce, and chili garlic sauce.

3. Pour the dressing over the cucumbers and toss to coat evenly.

Notes
