Ingredients
– 2 1/4 cups all-purpose flour
– 1 teaspoon baking powder
– 1/2 teaspoon salt
– 1 cup unsalted butter, softened
– 1 cup granulated sugar
– 1 egg
– 2 teaspoons vanilla extract
– Assorted edible flowers (such as pansies, violets, or rose petals)
Instructions
1. In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
2. In a large bowl, beat the butter and sugar together until light and fluffy, about 2-3 minutes. Beat in the egg and vanilla extract.
3. Gradually add the dry ingredients to the wet ingredients and mix until a dough forms. Divide the dough in half, shape into discs, wrap in plastic, and refrigerate for at least 30 minutes.
4. Preheat the oven to 350°F (177°C). Line baking sheets with parchment paper.
5. Working with one disc of dough at a time, roll out the dough on a lightly floured surface to 1/4-inch thickness. Use a floral-shaped cookie cutter or press to cut out shapes, placing the pressed flowers in the center.
6. Carefully transfer the shaped cookies to the prepared baking sheets, spacing them about 1 inch apart.
7. Bake for 8-10 minutes, or until the edges are lightly golden. Allow the cookies to cool on the baking sheets for 5 minutes before transferring to a wire rack to cool completely.
Notes
For best results, use high-quality, fresh edible flowers. Store the cookies in an airtight container at room temperature for up to 5 days.
