Ingredients

– 1 cup dry French lentils, rinsed

– 2 cups vegetable broth

– 1 pint cherry tomatoes, halved

– 1/2 cup diced red onion

– 2 tablespoons chopped fresh parsley

– 2 tablespoons chopped fresh basil

– 2 tablespoons extra-virgin olive oil

– 2 tablespoons red wine vinegar

– 1 teaspoon Dijon mustard

– 1/2 teaspoon salt

– 1/4 teaspoon black pepper


Instructions

1. 1. In a medium saucepan, combine the lentils and vegetable broth. Bring to a boil, then reduce heat and simmer for 20-25 minutes, or until lentils are tender. Drain and let cool.

2. 2. In a large bowl, combine the cooked lentils, cherry tomatoes, red onion, parsley, and basil.

Notes
