Ingredients

– 8 oz fusilli pasta

– 1 (28 oz) can diced tomatoes

– 3 cloves garlic, minced

– 1 small onion, diced

– 2 tbsp olive oil

– 1/4 cup fresh basil, chopped

– 1/2 cup grated parmesan cheese

– Salt and pepper to taste


Instructions

1. 1. Preheat oven to 400°F.

2. 2. In a large oven-safe skillet, heat the olive oil over medium heat. Add the minced garlic and diced onion, and sauté for 3-5 minutes until softened.

3. 3. Pour in the canned diced tomatoes, including the juice. Stir to combine.

4. 4. Transfer the skillet to the preheated oven and bake for 20-25 minutes, stirring halfway, until the sauce has thickened.

5. 5. Meanwhile, bring a large pot of salted water to a boil. Cook the fusilli according to package instructions until al dente.

6. 6. Drain the cooked fusilli and add it to the baked tomato sauce. Stir to coat the pasta evenly.

7. 7. Garnish with the chopped fresh basil and grated parmesan cheese.

8. 8. Season with salt and pepper to taste.

Notes

For a creamier sauce, you can stir in a few tablespoons of heavy cream or mascarpone cheese after baking. You can also add sautéed mushrooms or spinach for extra vegetables.
