Description

Tender, juicy chicken breasts marinated in a flavorful blend of garlic, herbs, and spices, paired with perfectly roasted carrots for a quick and satisfying 30-minute meal.


Ingredients

– 4 boneless, skinless chicken breasts

– 2 tablespoons olive oil

– 3 cloves garlic, minced

– 1 tablespoon dried thyme

– 1 tablespoon dried rosemary

– 1 teaspoon salt

– 1/2 teaspoon black pepper

– 1 pound carrots, peeled and cut into 1-inch pieces


Instructions

1. Preheat oven to 400°F.

2. In a shallow baking dish, combine the chicken breasts, olive oil, garlic, thyme, rosemary, salt, and pepper. Toss to coat the chicken evenly.

3. Arrange the chicken and carrots on a large baking sheet, making sure the chicken is not touching.

4. Roast for 25-30 minutes, or until the chicken is cooked through and the carrots are tender.

5. Serve the Garlic Herb Chicken and Roasted Carrots immediately, garnished with fresh parsley or thyme if desired.

Notes

For a crispier texture, broil the chicken and carrots for the last 2-3 minutes of cooking.
