Description

Warm up with this comforting and flavorful Ginger Garlic Chicken Noodle Soup. Soothing broth, tender chicken, and hearty noodles come together in this classic dish that’s sure to nourish the soul.


Ingredients

– 2 tablespoons olive oil

– 1 onion, diced

– 3 cloves garlic, minced

– 1 tablespoon grated fresh ginger

– 1 pound boneless, skinless chicken breasts, diced

– 4 cups chicken broth

– 2 carrots, peeled and sliced

– 2 celery stalks, sliced

– 8 ounces egg noodles

– 2 tablespoons chopped fresh cilantro

– Juice of 1 lime

– Salt and pepper to taste


Instructions

1. In a large pot or Dutch oven, heat the olive oil over medium heat.

2. Add the onion and sauté for 3-4 minutes until translucent.

3. Stir in the garlic and ginger and cook for 1 minute, until fragrant.

4. Add the diced chicken and cook for 5-7 minutes, until no longer pink.

5. Pour in the chicken broth and add the carrots and celery. Bring to a boil.

6. Reduce heat and simmer for 10 minutes.

7. Add the egg noodles and cook for 5-7 minutes, until tender.

8. Remove from heat and stir in the chopped cilantro and lime juice.

9. Season with salt and pepper to taste.

10. Serve hot and enjoy!

Notes

– For a heartier soup, you can add extra vegetables like mushrooms or spinach. – Leftovers can be stored in the refrigerator for up to 4 days.
