Ingredients
– 1 lb pork tenderloin, cut into 1-inch cubes
– 2 tablespoons olive oil
– 3 cloves garlic, minced
– 1 tablespoon grated fresh ginger
– Zest and juice of 2 limes
– 1/4 cup low-sodium soy sauce
– 2 tablespoons brown sugar
– 1 cup coconut milk
– 1 cup long-grain white rice
– 1/4 cup chopped fresh cilantro
Instructions
1. 1. In a large skillet, heat the olive oil over medium-high heat. Add the pork cubes and sear on all sides until browned, about 5 minutes.
2. 2. Add the garlic and ginger to the skillet and cook for 1 minute, until fragrant.
3. 3. Stir in the lime zest and juice, soy sauce, and brown sugar. Bring the mixture to a simmer and cook for 5-7 minutes, until the sauce has thickened slightly.
4. 4. Meanwhile, in a medium saucepan, combine the coconut milk and rice. Bring to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes, until the rice is tender.
5. 5. Fluff the coconut rice with a fork and stir in the chopped cilantro.
6. 6. Serve the ginger lime pork over the creamy coconut rice.
Notes
For a spicier dish, add a pinch of red pepper flakes to the pork. This recipe can also be made with chicken or shrimp instead of pork.
