Ingredients
– 2 1/4 cups all-purpose flour
– 2 teaspoons ground ginger
– 1 teaspoon baking soda
– 1/2 teaspoon ground cinnamon

– 1/4 teaspoon salt
– 3/4 cup unsalted butter, softened
– 3/4 cup packed brown sugar
– 1 egg
– 1/4 cup molasses
Instructions
1. – In a medium bowl, whisk together the flour, ginger, baking soda, cinnamon, cloves, and salt.
2. – In a large bowl, beat the butter and brown sugar until light and fluffy. Beat in the egg and molasses.
3. – Gradually stir the dry ingredients into the wet ingredients until a dough forms. Divide the dough in half, shape into discs, wrap in plastic, and refrigerate for at least 1 hour.
4. – Preheat the oven to 350°F. Line baking sheets with parchment paper.
5. – Working with one disc at a time, roll the dough out to 1/4-inch thickness on a lightly floured surface. Cut out shapes using cookie cutters and place the cookies 1 inch apart on the prepared baking sheets.
6. – Bake for 8 to 10 minutes, until the edges are lightly browned. Allow the cookies to cool on the baking sheets for 5 minutes before transferring to a wire rack to cool completely.
