– 2 teaspoons ground ginger
– 1 teaspoon ground cinnamon
– 1/4 teaspoon ground cloves
– 1/2 cup unsalted butter, softened
– 3/4 cup packed brown sugar
– 1 egg

Instructions
1. 1. In a medium bowl, whisk together the gluten-free flour, baking soda, salt, ginger, cinnamon, and cloves.
2. 2. In a large bowl, beat the butter and brown sugar until light and fluffy. Beat in the egg and molasses until well combined.
3. 3. Gradually stir the dry ingredients into the wet ingredients until a dough forms. Cover and chill the dough for at least 1 hour.
4. 4. Preheat the oven to 350°F (175°C). Line baking sheets with parchment paper.
5. 5. Roll the dough out to 1/4-inch thickness on a lightly floured surface. Cut into desired shapes using cookie cutters.
6. 6. Arrange the cookies on the prepared baking sheets, spacing them about 1 inch apart.
7. 7. Bake for 8-10 minutes, or until the edges are lightly golden. Allow the cookies to cool on the baking sheets for 5 minutes before transferring to a wire rack to cool completely.
