Ingredients

– 2 lbs fresh green beans, trimmed and cut into 1-inch pieces

– 1 can (10.5 oz) cream of mushroom soup, gluten-free

– 1/2 cup unsweetened almond milk

– 1/2 tsp garlic powder

– 1/2 tsp onion powder

– 1/4 tsp black pepper

– 1 cup gluten-free fried onions

– 1/4 cup gluten-free breadcrumbs


Instructions

1. 1. Preheat the oven to 375°F.

2. 2. In a large saucepan, bring a pot of salted water to a boil. Add the green beans and cook for 5-7 minutes, until tender-crisp. Drain and set aside.

3. 3. In a large mixing bowl, combine the cream of mushroom soup, almond milk, garlic powder, onion powder, and black pepper. Stir until well blended.

4. 4. Add the cooked green beans to the soup mixture and stir to coat.

5. 5. Transfer the green bean mixture to a 9×13-inch baking dish.

6. 6. In a small bowl, mix together the gluten-free fried onions and breadcrumbs. Sprinkle the mixture evenly over the top of the green bean casserole.

7. 7. Bake for 25-30 minutes, or until the topping is golden brown and the casserole is bubbling.

8. 8. Remove from the oven and let cool for 5 minutes before serving.

Notes

For a creamier texture, you can add an extra 1/4 cup of almond milk to the soup mixture. You can also substitute the gluten-free fried onions with homemade crispy onions. This casserole can be made in advance and reheated before serving.
