Ingredients

– 4 boneless, skinless chicken breasts

– 4 ounces goat cheese, softened

– 1 tablespoon olive oil

– 2 large onions, thinly sliced

– 2 cloves garlic, minced

– 1 tablespoon balsamic vinegar

– 1 tablespoon brown sugar

– Salt and pepper to taste

– Fresh thyme for garnish


Instructions

1. Preheat your oven to 375°F (190°C).

2. Using a sharp knife, cut a horizontal pocket into the side of each chicken breast, being careful not to cut all the way through.

3. In a small bowl, mix the softened goat cheese with a pinch of salt and pepper.

4. Stuff the goat cheese mixture evenly into the pockets of the chicken breasts.

5. In a large skillet, heat the olive oil over medium heat. Add the sliced onions and sauté for 10-15 minutes, stirring occasionally, until they are caramelized and golden brown.

6. Add the minced garlic and continue cooking for 2 more minutes.

7. Deglaze the pan with the balsamic vinegar and stir in the brown sugar. Cook for 2-3 minutes, until the sauce is thickened.

8. Transfer the chicken breasts to a baking dish and top them with the caramelized onions.

9. Bake for 20-25 minutes, or until the chicken is cooked through and the internal temperature reaches 165°F (75°C).

10. Garnish with fresh thyme and serve immediately.
