Description

These Scrumptious 20-Minute Greek Ground Chicken Bowls are a quick and easy weeknight dinner that’s packed with flavor. Tender, seasoned ground chicken is combined with fresh vegetables, fragrant herbs, and creamy feta for a nutritious and satisfying meal.


Ingredients

– 1 lb ground chicken

– 1 tbsp olive oil

– 1 onion, diced

– 3 cloves garlic, minced

– 1 tsp dried oregano

– 1/2 tsp dried basil

– 1/4 tsp red pepper flakes (optional)

– Salt and pepper to taste

– 2 cups cooked rice

– 1 cup diced tomatoes

– 1 cup diced cucumbers

– 1/2 cup crumbled feta cheese

– 2 tbsp chopped fresh parsley

– 1 tbsp fresh lemon juice


Instructions

1. 1. In a large skillet, cook the ground chicken over medium-high heat, breaking it up with a spatula, until browned and cooked through, about 5-7 minutes.

2. 2. Add the olive oil, onion, and garlic to the skillet. Sauté for 2-3 minutes until the onion is translucent.

3. 3. Stir in the oregano, basil, red pepper flakes (if using), and season with salt and pepper to taste. Cook for 1 minute.

4. 4. Add the cooked rice, diced tomatoes, and diced cucumbers to the skillet. Toss everything together until well combined and heated through, about 2-3 minutes.

5. 5. Remove from heat and stir in the crumbled feta cheese and chopped parsley.

6. 6. Drizzle with fresh lemon juice and serve immediately.

Notes

– Customize the veggies based on your preferences – bell peppers, kalamata olives, or spinach would also be delicious.

– For extra protein, top the bowls with grilled chicken or chickpeas.
