Ingredients

– 2 cups all-purpose flour

– 1 teaspoon baking powder

– 3/4 cup unsalted butter, softened

– 1 cup granulated sugar

– 3 large eggs

– 1/2 cup Greek yogurt

– 1/2 cup honey, plus more for drizzling

– 1 teaspoon vanilla extract

– 1 teaspoon ground cinnamon

– 1/2 cup chopped walnuts


Instructions

1. Preheat your oven to 350°F (175°C). Grease a 9-inch round baking pan and line the bottom with parchment paper.

2. In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.

3. In a large mixing bowl, cream the softened butter and granulated sugar until light and fluffy, about 2-3 minutes.

4. Add the eggs one at a time, beating well after each addition. Then stir in the Greek yogurt, 1/2 cup honey, and vanilla extract.

5. Gradually fold in the dry ingredients from the first step, mixing just until combined. Avoid overmixing.

6. Pour the batter into the prepared baking pan and smooth the top. Sprinkle the chopped walnuts over the top.

7. Bake for 35-40 minutes, or until a toothpick inserted into the center comes out clean.

8. Allow the cake to cool in the pan for 10 minutes, then invert it onto a wire rack to cool completely.

9. Once cooled, drizzle the top of the cake with additional honey and serve.

Notes

For an extra-moist and flavorful cake, you can brush the top of the warm cake with a bit of honey before serving. This cake can be stored at room temperature for up to 3 days, or in the refrigerator for up to 5 days.
