Ingredients
– 2 cups all-purpose flour
– 1 3/4 cups granulated sugar
– 3/4 cup unsweetened cocoa powder
– 1 1/2 teaspoons baking soda
– 1/2 teaspoon salt
– 1 cup buttermilk
– 1/2 cup unsalted butter, softened
– 2 large eggs
– 1 teaspoon vanilla extract
– 1-2 teaspoons green food coloring
– 8 ounces cream cheese, softened
– 1/2 cup unsalted butter, softened
– 3 cups powdered sugar
Instructions
1. Preheat the oven to 350°F (175°C). Line a 12-cup muffin tin with paper liners.
2. In a medium bowl, whisk together the flour, sugar, cocoa powder, baking soda, and salt.
3. In a separate bowl, beat the buttermilk, 1/2 cup softened butter, eggs, and vanilla extract until well combined.
4. Slowly add the wet ingredients to the dry ingredients, mixing until just combined. Stir in the green food coloring, starting with 1 teaspoon and adding more to achieve the desired color.
5. Scoop the batter into the prepared muffin cups, filling them about 3/4 full.
6. Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
7. Allow the cupcakes to cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.
8. In a large bowl, beat the cream cheese and 1/2 cup softened butter until smooth and creamy.
9. Gradually add the powdered sugar, beating until the frosting is light and fluffy.
10. Frost the cooled cupcakes with the cream cheese frosting and serve.
