Description

Grilled Apricot and Goat Cheese Crostini is a delightful and easy-to-make appetizer that combines the sweet flavor of grilled apricots with the creamy tanginess of goat cheese, all served on crisp crostini.


Ingredients

– 6 fresh apricots, halved and pitted

– 1 baguette, sliced into 1/2-inch thick rounds

– 4 ounces goat cheese, crumbled

– 2 tablespoons olive oil

– 1 tablespoon honey

– 1/4 teaspoon sea salt

– 1/8 teaspoon black pepper


Instructions

1. Preheat a grill or grill pan to medium-high heat.

2. Brush the apricot halves with olive oil and season with a pinch of salt and pepper.

3. Grill the apricot halves for 2-3 minutes per side, or until lightly charred and softened.

4. Brush the baguette slices with the remaining olive oil.

5. Grill the baguette slices for 1-2 minutes per side, or until lightly toasted.

6. Top each grilled baguette slice with a grilled apricot half and a sprinkle of crumbled goat cheese.

7. Drizzle the crostini with honey and serve immediately.

Notes

For a variation, try using a different type of cheese, such as feta or brie. The crostini can also be served at room temperature.
