This Grilled Chicken & Sweet Potato Bowl is a delicious and balanced meal that’s perfect for busy weeknights. Tender grilled chicken, roasted sweet potatoes, and fresh greens come together in a satisfying and nutritious bowl.
Ingredients
– 4 boneless, skinless chicken breasts
– 3 medium sweet potatoes, peeled and cubed
– 2 tbsp olive oil, divided
– 1 tsp garlic powder
– 1 tsp paprika
– 1/2 tsp salt
– 1/4 tsp black pepper
– 4 cups mixed greens
Instructions
1. 1. Preheat grill to medium-high heat.
2. 2. In a large bowl, toss the cubed sweet potatoes with 1 tbsp of olive oil, garlic powder, paprika, salt, and pepper.
3. 3. Spread the seasoned sweet potatoes on a baking sheet and roast for 20-25 minutes, or until tender and lightly browned.
4. 4. Meanwhile, brush the chicken breasts with the remaining 1 tbsp of olive oil and season with salt and pepper.
5. 5. Grill the chicken for 6-8 minutes per side, or until cooked through.

7. 7. Assemble the bowls by layering the mixed greens, roasted sweet potatoes, and sliced or shredded grilled chicken.
Notes
For extra flavor, you can marinate the chicken in a mixture of olive oil, lemon juice, and your favorite herbs before grilling. You can also add other vegetables, such as roasted bell peppers or sautéed spinach, to the bowls.
