Description

Tender, juicy chicken breasts marinated in a zesty lemon-herb mixture and grilled to perfection on skewers. A quick and easy summer meal that’s bursting with fresh flavor.


Ingredients

– 1 1/2 pounds boneless, skinless chicken breasts, cut into 1-inch cubes

– 1/4 cup olive oil

– 3 tablespoons fresh lemon juice

– 2 tablespoons chopped fresh parsley

– 1 tablespoon chopped fresh thyme

– 1 tablespoon chopped fresh oregano

– 2 teaspoons grated lemon zest

– 1 teaspoon salt

– 1/2 teaspoon black pepper


Instructions

1. In a large bowl, whisk together the olive oil, lemon juice, parsley, thyme, oregano, lemon zest, salt, and pepper.

2. Add the cubed chicken to the marinade and toss to coat. Cover and refrigerate for 30 minutes to 1 hour.

3. Preheat grill to medium-high heat. Thread the marinated chicken onto metal or wooden skewers.

4. Grill the chicken skewers for 12-15 minutes, turning occasionally, until the chicken is cooked through and slightly charred.

5. Serve the grilled lemon-herb chicken skewers immediately, garnished with extra lemon wedges and chopped parsley if desired.

Notes

For best results, let the chicken marinate for at least 30 minutes to allow the flavors to fully develop. Wooden skewers should be soaked in water for 30 minutes prior to use to prevent burning. Adjust the grilling time as needed, depending on the thickness of your chicken cubes.
