Ingredients
– 4 ripe peaches, halved and pitted
– 8 ounces burrata cheese
– 8 slices prosciutto
– 2 tablespoons balsamic glaze
– 10 fresh basil leaves, thinly sliced
Instructions
1. Preheat grill or grill pan to medium-high heat.
2. Brush the cut side of the peach halves with a light coating of olive oil.
3. Place the peach halves, cut-side down, on the hot grill or grill pan. Cook for 3-4 minutes, or until grill marks appear and the peaches are slightly softened.
4. Carefully flip the peach halves and cook for an additional 2-3 minutes, or until the peaches are tender but still hold their shape.
5. Transfer the grilled peach halves to a serving platter.
6. Place a small mound of burrata cheese on top of each peach half.
7. Drape a slice of prosciutto over the burrata on each peach.
8. Drizzle the entire dish with balsamic glaze.
9. Garnish with the sliced fresh basil leaves.
