– 4 boneless, skinless chicken breasts

– 1 cup salsa verde

– 1 cup shredded pepper jack cheese

– 1 tbsp olive oil

– 1 tsp garlic powder

– 1 tsp chili powder

– Salt and pepper to taste

Instructions

1. – Preheat grill to medium-high heat.

2. – Season the chicken breasts with garlic powder, chili powder, salt, and pepper.

3. – Grill the chicken for 5-7 minutes per side, until cooked through.

4. – Remove the chicken from the grill and top each piece with salsa verde and shredded pepper jack cheese.

5. – Return the chicken to the grill and cook for an additional 2-3 minutes, or until the cheese is melted and bubbly.

Notes

For extra flavor, you can marinate the chicken in the salsa verde for 30 minutes to an hour before grilling. This dish pairs well with a fresh salad, roasted vegetables, or rice.
