Description

Ingredients

– 1 lb ground turkey

– 3 medium russet potatoes, peeled and cubed

– 1 onion, diced

– 3 cloves garlic, minced

– 2 tsp paprika

– 1 tsp dried thyme

– 1 tsp salt

– 1/2 tsp black pepper

– 2 tbsp olive oil

– 1 cup chicken broth


Instructions

1. 1. In a large skillet, heat the olive oil over medium-high heat.

2. 2. Add the ground turkey and cook, breaking it up with a wooden spoon, until browned, about 5 minutes.

3. 3. Add the diced onion and minced garlic. Cook for 2-3 minutes, until the onion is translucent.

4. 4. Stir in the cubed potatoes, paprika, thyme, salt, and pepper. Pour in the chicken broth.

5. 5. Bring the mixture to a boil, then reduce heat and simmer for 15-20 minutes, until the potatoes are tender.

6. 6. Taste and adjust seasoning as needed.

7. 7. Serve hot, garnished with fresh parsley or green onions if desired.

Notes

For a creamier texture, you can mash some of the potatoes against the side of the pan during the last few minutes of cooking. Customize the spices to your taste or add your favorite herbs.
