Ingredients
– 2 tablespoons unsalted butter
– 1 onion, diced
– 3 cloves garlic, minced
– 2 pounds Russet potatoes, peeled and diced
– 4 cups chicken or vegetable broth
– 1 cup diced cooked ham
– 1 cup heavy cream
– 2 teaspoons dried thyme
– Salt and black pepper, to taste
– Chopped fresh parsley for garnish
Instructions
1. 1. In a large pot or Dutch oven, melt the butter over medium heat.
2. 2. Add the diced onion and sauté for 5-7 minutes until softened.
3. 3. Stir in the minced garlic and cook for an additional minute.
4. 4. Add the diced potatoes and broth to the pot. Bring the mixture to a boil, then reduce the heat and simmer for 15-20 minutes, or until the potatoes are tender.
5. 5. Using a potato masher or the back of a spoon, lightly mash some of the potatoes to thicken the soup.
6. 6. Stir in the diced ham and heavy cream. Season with dried thyme, salt, and black pepper to taste.

Notes
For a creamier soup, use an immersion blender to puree a portion of the soup. You can also add shredded cheddar cheese or crumbled bacon as toppings.
