Ingredients
– 1 lb ground beef
– 1 onion, diced
– 3 cloves garlic, minced
– 4 cups chicken or beef broth
– 3 medium potatoes, peeled and diced
– 1 cup heavy cream
– 1 tsp dried thyme
– 1 tsp dried parsley
– Salt and pepper to taste
– Toppings: shredded cheddar cheese, crumbled bacon, chopped chives
Instructions
1. – In a large pot or Dutch oven, cook the ground beef over medium-high heat until browned and crumbled, 5-7 minutes. Drain excess fat.
2. – Add the diced onion and minced garlic to the pot. Cook for 2-3 minutes, until the onion is translucent.
3. – Pour in the broth and add the diced potatoes. Bring the mixture to a boil, then reduce heat and simmer for 15-20 minutes, or until the potatoes are tender.
4. – Stir in the heavy cream, dried thyme, and dried parsley. Season with salt and pepper to taste.

Notes
