– 3 carrots, peeled and diced
– 3 celery stalks, diced
– 4 cups beef broth
– 1 (15 oz) can tomato sauce
– 2 tsp Worcestershire sauce
– 1 tsp dried oregano
– 1 tsp dried basil
– Salt and pepper to taste
Instructions
1. – In a large pot or Dutch oven, cook the ground beef over medium-high heat until browned and crumbled, 5-7 minutes. Drain excess fat.
2. – Add the onion, carrots, and celery to the pot. Sauté for 5-7 minutes until the vegetables are tender.
3. – Pour in the beef broth, tomato sauce, Worcestershire sauce, oregano, and basil. Season with salt and pepper to taste.
4. – Bring the soup to a boil, then reduce heat and simmer for 20-25 minutes, until the vegetables are very tender.
5. – Taste and adjust seasoning as needed. Serve hot, garnished with fresh parsley if desired.
Notes
For a thicker soup, you can mash some of the vegetables against the side of the pot. You can also add diced potatoes or pasta for extra heartiness. This soup freezes well for up to 3 months.
