Description

Cure what ails you with this comforting, creamy Hangover Cure Garlic Potato Soup. Packed with tender potatoes, roasted garlic, and savory seasonings, this soup is a true soothing remedy.


Ingredients

– 2 pounds Yukon Gold potatoes, peeled and cubed

– 1 head garlic, roasted and cloves mashed

– 1 onion, diced

– 4 cups chicken or vegetable broth

– 1 cup heavy cream

– 2 tablespoons butter

– 1 teaspoon dried thyme

– 1 teaspoon salt

– 1/2 teaspoon black pepper


Instructions

1. Preheat oven to 400°F. Cut the top off the head of garlic, drizzle with olive oil, and wrap in foil. Roast for 45 minutes until soft. Squeeze the cloves out of the skins and mash.

2. In a large pot, melt the butter over medium heat. Add the diced onion and sauté for 5 minutes until translucent.

3. Add the cubed potatoes, roasted garlic, thyme, salt, and pepper. Pour in the broth and bring to a boil.

4. Reduce heat and simmer for 20 minutes, or until the potatoes are very tender.

5. Remove from heat and stir in the heavy cream. Use an immersion blender to puree the soup until smooth and creamy.

6. Taste and adjust seasoning as needed. Serve hot, garnished with extra cream, chopped parsley, or crispy bacon bits.

Notes

For a thicker soup, use half-and-half or evaporated milk instead of heavy cream. Add diced cooked chicken or bacon for extra protein.
