Description

This Harvest Celery Salad is a refreshing and flavorful side dish that celebrates the best of autumn produce. Crisp celery, juicy apples, and toasted pecans are tossed in a tangy vinaigrette for a delightful balance of crunch and acidity.

Ingredients

– 4 cups chopped celery (about 8 medium stalks)

– 2 crisp apples, cored and sliced

– 1/2 cup toasted pecans

– 2 tablespoons lemon juice

– 2 tablespoons olive oil

– 1 tablespoon apple cider vinegar

– 1 teaspoon Dijon mustard

– 1/2 teaspoon honey

– 1/4 teaspoon salt

– 1/8 teaspoon black pepper

Instructions

1. In a large bowl, combine the chopped celery, sliced apples, and toasted pecans.

2. In a small bowl, whisk together the lemon juice, olive oil, apple cider vinegar, Dijon mustard, honey, salt, and pepper to make the vinaigrette.

3. Pour the vinaigrette over the celery, apple, and pecan mixture and toss gently to coat.

4. Serve the Harvest Celery Salad chilled or at room temperature.

Notes

For a heartier salad, you can add cooked chicken or turkey. This salad also makes a great topping for grilled fish or pork chops.
