Description

This Healthy Chicken & Sweet Potato Rice Bowl is a quick, nourishing, and delicious family-style meal. Tender chicken, roasted sweet potatoes, and fluffy rice come together in a balanced and flavorful dish that’s perfect for busy weeknights.


Ingredients

– 1 lb boneless, skinless chicken breasts

– 2 medium sweet potatoes, peeled and cubed

– 1 cup uncooked brown rice

– 2 tbsp olive oil

– 1 tsp garlic powder

– 1 tsp paprika

– 1/2 tsp onion powder

– Salt and pepper to taste

– Chopped fresh parsley for garnish


Instructions

1. 1. Preheat oven to 400°F. Toss the sweet potato cubes with 1 tbsp olive oil, garlic powder, paprika, salt, and pepper. Spread on a baking sheet and roast for 20-25 minutes, until tender.

2. 2. In a large skillet, heat the remaining 1 tbsp olive oil over medium-high heat. Season the chicken breasts with onion powder, salt, and pepper. Cook for 5-7 minutes per side, until cooked through. Allow to rest for 5 minutes, then slice or shred the chicken.

3. 3. While the chicken and sweet potatoes are cooking, prepare the rice according to package instructions.

4. 4. To assemble the bowls, divide the rice, roasted sweet potatoes, and sliced chicken evenly among 4 serving bowls. Garnish with fresh chopped parsley.

Notes

– Feel free to customize the seasoning to your taste.

– For extra flavor, you can also add sautéed onions or bell peppers to the rice.

– Leftovers can be stored in the refrigerator for up to 4 days.
