Description

This Healthy Chicken Zucchini Squash Skillet is a quick and easy one-pan meal that’s packed with fresh vegetables and lean protein. The tender chicken, zucchini, and yellow squash are sautéed in a flavorful sauce for a nutritious and delicious weeknight dinner.


Ingredients

– 1 lb boneless, skinless chicken thighs, cut into 1-inch pieces

– 2 medium zucchini, sliced into half-moons

– 2 medium yellow squash, sliced into half-moons

– 3 cloves garlic, minced

– 2 tbsp olive oil

– 1 tsp dried oregano

– 1/2 tsp paprika

– 1/4 tsp red pepper flakes (optional)

– Salt and black pepper to taste


Instructions

1. – Heat the olive oil in a large skillet over medium-high heat.

2. – Add the chicken and season with salt, pepper, oregano, and paprika. Cook for 5-7 minutes, stirring occasionally, until the chicken is lightly browned.

3. – Add the zucchini, yellow squash, and garlic to the skillet. Continue cooking for 8-10 minutes, stirring occasionally, until the vegetables are tender-crisp.

4. – If using, sprinkle in the red pepper flakes and stir to combine.

5. – Taste and adjust seasoning as needed.
