These Healthy Garlic Herb Roasted Radishes are a delicious and easy side dish that’s bursting with flavor. Tender roasted radishes are coated in a savory garlic herb seasoning for a perfectly crispy, caramelized exterior and tender interior.
Ingredients
– 1 pound radishes, trimmed and halved (or quartered if large)
– 2 tablespoons olive oil
– 3 cloves garlic, minced
– 1 teaspoon dried thyme
– 1 teaspoon dried oregano
– 1/2 teaspoon paprika
– 1/4 teaspoon crushed red pepper flakes (optional)
– Salt and pepper to taste
– 2 tablespoons fresh parsley, chopped
Instructions
1. Preheat the oven to 400°F (200°C).
2. In a large bowl, toss the halved radishes with the olive oil, garlic, thyme, oregano, paprika, and red pepper flakes (if using). Season with salt and pepper.
3. Spread the radishes in a single layer on a baking sheet.
4. Roast for 20-25 minutes, stirring halfway, until the radishes are tender and lightly browned.
5. Remove from the oven and sprinkle with the fresh parsley.
6. Serve immediately as a delicious side dish.
Notes
– For extra crispy radishes, broil for 2-3 minutes at the end.
