Ingredients
– 1 pound boneless, skinless chicken breasts, cut into 1-inch cubes
– 1/4 cup olive oil
– 2 tablespoons lemon juice
– 3 cloves garlic, minced
– 1 tablespoon dried oregano
– 1 teaspoon salt
– 1/2 teaspoon black pepper
– 1 medium red onion, cut into 1-inch pieces
– 1 bell pepper, cut into 1-inch pieces
– 12 cherry tomatoes, halved
– Lemon wedges, for serving
– Chopped parsley, for garnish
Instructions
1. In a large bowl, combine the chicken, olive oil, lemon juice, garlic, oregano, salt, and pepper. Toss to coat the chicken evenly. Cover and refrigerate for 30 minutes to 1 hour.
