Ingredients
– 1 lb lean ground beef
– 1 onion, diced
– 3 cloves garlic, minced
– 2 carrots, peeled and diced
– 2 celery stalks, diced
– 1 (28 oz) can crushed tomatoes
– 4 cups low-sodium chicken broth
– 8 oz lasagna noodles, broken into 1-inch pieces
– 2 cups fresh spinach, chopped
– 1 tsp dried oregano
– 1 tsp dried basil
– Salt and pepper to taste
– Shredded mozzarella cheese for serving (optional)
Instructions
1. 1. In a large pot or Dutch oven, cook the ground beef over medium-high heat until browned and crumbled, 5-7 minutes. Drain any excess fat.
2. 2. Add the onion, garlic, carrots, and celery to the pot. Sauté for 5-7 minutes, until the vegetables are softened.
3. 3. Stir in the crushed tomatoes, chicken broth, and broken lasagna noodles. Bring the soup to a boil, then reduce the heat and simmer for 15-20 minutes, or until the noodles are tender.
4. 4. Add the chopped spinach, oregano, and basil. Season with salt and pepper to taste.
5. 5. Serve the Healthy Lasagna Soup hot, garnished with shredded mozzarella cheese if desired.
Notes
– For a creamier soup, stir in a dollop of ricotta cheese or heavy cream at the end.
– Try adding other vegetables like zucchini, bell peppers, or mushrooms.
– Swap the ground beef for ground turkey or Italian sausage for variation.
