Description

This Healthy Pumpkin Bread is a moist, flavorful quick bread made with real pumpkin, warm spices, and wholesome ingredients. It’s the perfect comforting treat for cozy fall days.


Ingredients

– 1 1/2 cups whole wheat flour

– 1 teaspoon baking soda

– 1/2 teaspoon salt

– 1 1/2 teaspoons ground cinnamon

– 1/2 teaspoon ground nutmeg

– 1/4 teaspoon ground cloves

– 1 cup canned pumpkin puree

– 3/4 cup brown sugar

– 2 large eggs

– 1/3 cup unsweetened applesauce

– 2 tablespoons vegetable oil

– 1 teaspoon vanilla extract


Instructions

1. – Preheat the oven to 350°F (175°C). Grease a 9×5-inch loaf pan.

2. – In a medium bowl, whisk together the whole wheat flour, baking soda, salt, cinnamon, nutmeg, and cloves.

3. – In a large bowl, combine the pumpkin puree, brown sugar, eggs, applesauce, oil, and vanilla extract. Mix until well combined.

4. – Add the dry ingredients to the wet ingredients and stir just until incorporated, being careful not to overmix.

5. – Pour the batter into the prepared loaf pan and bake for 55-60 minutes, or until a toothpick inserted in the center comes out clean.

6. – Allow the bread to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.

Notes

– For a sweeter bread, you can increase the brown sugar to 1 cup.

– Chopped walnuts or pecans make a great addition to the batter.

– The bread can be stored in an airtight container at room temperature for up to 5 days, or frozen for up to 3 months.
