Ingredients
– 1 lb carrots, peeled and cut into 1-inch pieces
– 2 tbsp unsalted butter
– 1/4 tsp salt
– 1/4 tsp black pepper
– 2 tbsp chopped fresh parsley
Instructions
1. 1. Bring a large pot of salted water to a boil. Add the carrots and cook until very tender, about 10 minutes.
2. 2. Drain the carrots and return them to the pot. Add the butter, salt, and pepper. Use a potato masher or fork to mash the carrots until they’re smooth and creamy.
3. 3. Stir in the chopped parsley and serve hot.
