Ingredients

– 1 lb boneless, skinless chicken breasts, diced

– 1 medium onion, diced

– 2 bell peppers, diced

– 2 cans (15 oz each) black beans, drained and rinsed

– 1 can (15 oz) corn, drained

– 1 can (28 oz) diced tomatoes

– 4 cups low-sodium chicken broth

– 2 tsp chili powder

– 1 tsp ground cumin

– 1 tsp garlic powder

– 1/2 tsp dried oregano

– Salt and black pepper to taste

– Toppings: shredded cheese, sour cream, diced avocado, crushed tortilla chips


Instructions

1. – In a large pot or Dutch oven, sauté the diced chicken over medium-high heat until browned, about 5-7 minutes.

2. – Add the diced onion and bell peppers to the pot and cook for 3-4 minutes, until the vegetables are softened.

3. – Stir in the black beans, corn, diced tomatoes, and chicken broth. Season with chili powder, cumin, garlic powder, oregano, salt, and black pepper.

4. – Bring the soup to a boil, then reduce the heat and let it simmer for 15-20 minutes, or until the flavors have melded and the chicken is cooked through.

5. – Ladle the Healthy Taco Soup into bowls and top with your desired toppings, such as shredded cheese, sour cream, diced avocado, and crushed tortilla chips.

Notes
