Description

This Healthy White Chicken Chili is a comforting and wholesome meal that’s quick to prepare and bursting with flavor. Made with tender chicken, creamy white beans, and a blend of aromatic spices, it’s a delicious and nutritious option for any night of the week.


Ingredients

– 1 lb boneless, skinless chicken breasts

– 1 tbsp olive oil

– 1 onion, diced

– 3 cloves garlic, minced

– 2 tsp ground cumin

– 1 tsp dried oregano

– 1 tsp chili powder

– 1/2 tsp salt

– 1/4 tsp black pepper

– 2 (15 oz) cans white beans, drained and rinsed

– 4 cups low-sodium chicken broth

– 1/4 cup chopped fresh cilantro (optional)

– Avocado, lime wedges, and crushed tortilla chips for serving (optional)


Instructions

1. – In a large pot or Dutch oven, heat the olive oil over medium heat.

2. – Add the diced onion and sauté for 5-7 minutes, until translucent.

3. – Add the minced garlic and cook for 1 minute, until fragrant.

4. – Season the chicken breasts with the cumin, oregano, chili powder, salt, and pepper.

5. – Add the seasoned chicken to the pot and cook for 6-8 minutes per side, until cooked through.

6. – Remove the chicken from the pot and shred or chop it into bite-sized pieces.

7. – Add the shredded chicken, white beans, and chicken broth to the pot. Bring the mixture to a simmer and cook for 10-15 minutes, until heated through.

8. – Stir in the chopped cilantro (if using).

9. – Serve the Healthy White Chicken Chili hot, with desired toppings such as avocado, lime wedges, and crushed tortilla chips.

Notes

– For a creamier chili, you can blend a portion of the beans before adding them back to the pot.

– Adjust the spice level by adding more or less chili powder to your taste.
