Ingredients
– 1 (5-6 pound) prime rib roast
– 1/2 cup unsalted butter, softened
– 1/4 cup finely chopped fresh rosemary
– 1/4 cup finely chopped fresh thyme
– 4 cloves garlic, minced
– 2 teaspoons coarse sea salt
– 1 teaspoon freshly ground black pepper
Instructions
1. Preheat your oven to 450°F (230°C).
2. In a small bowl, mix together the softened butter, rosemary, thyme, garlic, salt, and pepper until well combined.
3. Pat the prime rib roast dry with paper towels and generously rub the herb butter mixture all over the meat, making sure to cover the entire surface.
4. Place the roast fat-side up on a rack set in a large roasting pan.
5. Roast the prime rib for 15 minutes, then reduce the oven temperature to 300°F (150°C) and continue roasting until it reaches your desired doneness, about 2 to 2 1/2 hours for medium-rare.
6. Use a meat thermometer to check the internal temperature of the roast, which should reach 130°F (55°C) for medium-rare.
7. Once the prime rib is cooked to your liking, remove it from the oven and let it rest for at least 15-20 minutes before slicing and serving.

For best results, let the prime rib roast sit at room temperature for 30 minutes before cooking. This will help ensure even cooking. You can adjust the cooking time as needed to achieve your desired level of doneness.
