Ingredients
– 1 (4-5 pound) whole chicken
– 2 tablespoons olive oil
– 1 tablespoon dried thyme
– 1 tablespoon dried rosemary
– 1 tablespoon dried oregano
– 2 teaspoons garlic powder
– 1 teaspoon salt
– 1/2 teaspoon black pepper
Instructions
1. Preheat your oven to 425°F (220°C).
2. Pat the chicken dry with paper towels and place it in a large roasting pan or baking dish.
3. In a small bowl, mix together the olive oil, thyme, rosemary, oregano, garlic powder, salt, and black pepper.
4. Rub the herb mixture all over the chicken, making sure to coat the skin evenly.
5. Roast the chicken in the preheated oven for 25-30 minutes, or until the internal temperature reaches 165°F (75°C) and the juices run clear.
6. Remove the chicken from the oven and let it rest for 5-10 minutes before carving and serving.
Notes
For a crispier skin, you can baste the chicken with the pan juices every 10 minutes during the roasting process. Additionally, you can stuff the cavity of the chicken with lemon wedges, garlic cloves, or additional fresh herbs for extra flavor.
