Description

Juicy chicken breasts stuffed with a creamy, herb-infused ricotta filling make for a delicious and impressive main dish. This easy-to-prepare recipe is perfect for busy weeknights or special occasions.


Ingredients

– 4 boneless, skinless chicken breasts

– 1 cup ricotta cheese

– 1/4 cup freshly grated Parmesan cheese

– 2 tablespoons chopped fresh parsley

– 1 tablespoon chopped fresh thyme

– 1 garlic clove, minced

– 1/4 teaspoon salt

– 1/4 teaspoon black pepper


Instructions

1. Preheat oven to 375°F.

2. In a medium bowl, mix together the ricotta, Parmesan, parsley, thyme, garlic, salt, and pepper until well combined.

3. Butterfly the chicken breasts by cutting them in half horizontally, being careful not to cut all the way through.

4. Spread the ricotta mixture evenly onto the butterflied chicken breasts.

5. Roll up the chicken breasts and secure with toothpicks or kitchen string.

6. Place the stuffed chicken rolls in a baking dish and bake for 25-30 minutes, or until the chicken is cooked through and the internal temperature reaches 165°F.

7. Remove the toothpicks or string and serve the Herbed Ricotta Stuffed Chicken Rolls immediately.
