Ingredients
– 1 tablespoon olive oil
– 1 onion, diced
– 3 carrots, peeled and diced
– 3 celery stalks, diced
– 4 garlic cloves, minced
– 2 cans (15 oz each) white beans, drained and rinsed
– 4 cups low-sodium vegetable broth
– 1 teaspoon dried thyme
– 1 teaspoon dried rosemary
– 1/2 teaspoon smoked paprika
– Salt and black pepper to taste
– Chopped fresh parsley for garnish
Instructions
1. In a large pot or Dutch oven, heat the olive oil over medium heat.
2. Add the diced onion, carrots, and celery. Sauté for 5-7 minutes, until the vegetables are softened.
3. Stir in the minced garlic and cook for 1 minute, until fragrant.
4. Add the drained and rinsed white beans, vegetable broth, thyme, rosemary, and smoked paprika. Season with salt and black pepper to taste.
