Description
Homemade Cheddar Herb Crackers are a quick and easy snack that are perfect for any occasion. These flaky, cheesy crackers are bursting with fresh herb flavor and can be ready in just 15 minutes.
Ingredients
– 2 cups all-purpose flour
– 1 teaspoon baking powder
– 1/2 teaspoon salt
– 1/2 cup unsalted butter, cold and cubed
– 1 cup shredded sharp cheddar cheese
– 2 tablespoons finely chopped fresh herbs (such as rosemary, thyme, and chives)
– 3-4 tablespoons ice water
Instructions
1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
2. In a large bowl, whisk together the flour, baking powder, and salt.
3. Cut in the cold butter using a pastry cutter or two forks until the mixture resembles coarse crumbs.
4. Stir in the shredded cheddar cheese and fresh herbs.
5. Add the ice water 1 tablespoon at a time, mixing gently with a fork, until the dough just begins to come together.
6. Turn the dough out onto a lightly floured surface and knead briefly, about 30 seconds, until the dough forms a smooth ball.
7. Roll the dough out to 1/8-inch thickness. Use a 2-inch cookie cutter or biscuit cutter to cut out round crackers.
8. Transfer the crackers to the prepared baking sheet, spacing them about 1 inch apart.
9. Bake for 12-15 minutes, or until the crackers are golden brown and crispy.
10. Allow the crackers to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
Notes
Store the crackers in an airtight container at room temperature for up to 1 week. You can also freeze the unbaked cracker dough for later use.
