Description

This Homemade French Garlic Soup is a quick, easy, and incredibly flavorful dish that’s perfect for a cozy night in. Packed with robust garlic flavor and a rich, creamy texture, this soup is sure to warm your soul.


Ingredients

– 3 tablespoons unsalted butter

– 1 large onion, diced

– 8 cloves of garlic, minced

– 4 cups low-sodium chicken or vegetable broth

– 1 bay leaf

– 2 sprigs fresh thyme

– 1 teaspoon Dijon mustard

– 1/4 cup heavy cream

– 1/4 cup grated Parmesan cheese

– Salt and freshly ground black pepper, to taste


Instructions

1. In a large pot or Dutch oven, melt the butter over medium heat. Add the diced onion and cook, stirring occasionally, until softened and translucent, about 5 minutes.

2. Add the minced garlic and cook for an additional 2-3 minutes, stirring constantly, until fragrant.

3. Pour in the broth and add the bay leaf and thyme sprigs. Bring the mixture to a simmer and let it cook for 15 minutes.

4. Remove the bay leaf and thyme sprigs. Stir in the Dijon mustard and heavy cream.

5. Use an immersion blender to puree the soup until smooth and creamy.

6. Stir in the grated Parmesan cheese and season with salt and pepper to taste.

7. Serve the Homemade French Garlic Soup hot, garnished with additional Parmesan cheese and fresh thyme, if desired. Enjoy with crusty bread.

Notes

For a thicker, more indulgent soup, you can add an extra 1/4 cup of heavy cream. To make this soup vegetarian, use vegetable broth instead of chicken broth.
