Ingredients
– 2 cups all-purpose flour
– 1 tablespoon baking powder
– 1/2 teaspoon salt
– 1/2 cup unsalted butter, softened
– 3/4 cup granulated sugar
– 2 large eggs
– 1 cup whole milk
– 1 tablespoon lemon zest
– 1/4 cup lemon juice
– 8 ounces cream cheese, softened
Instructions
1. – Preheat the oven to 350°F. Grease a 9×5-inch loaf pan.
2. – In a medium bowl, whisk together the flour, baking powder, and salt.
3. – In a large bowl, beat the butter and sugar until light and fluffy. Beat in the eggs one at a time.
4. – In a separate bowl, mix together the milk, lemon zest, and lemon juice.
5. – Add the dry ingredients to the butter mixture alternately with the milk mixture, mixing just until combined.
6. – In a small bowl, beat the cream cheese until smooth.
7. – Pour half of the bread batter into the prepared loaf pan. Dollop the cream cheese mixture over the batter and gently swirl it in with a knife. Top with the remaining bread batter.
8. – Bake for 55-60 minutes, or until a toothpick inserted in the center comes out clean. Allow the bread to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
Notes
For a sweeter bread, you can increase the sugar up to 1 cup. Stored in an airtight container, the lemon cheese bread will keep for up to 4 days at room temperature.
