Description

Ingredients

– 1 cup all-purpose flour

– 1 cup yellow cornmeal

– 2 teaspoons baking powder

– 1/2 teaspoon salt

– 1/2 cup unsalted butter, melted

– 1/2 cup honey

– 2 large eggs

– 1/2 cup milk


Instructions

1. Preheat your oven to 400°F (200°C). Grease a 24-cup mini muffin tin or line it with paper liners.

2. In a large bowl, whisk together the flour, cornmeal, baking powder, and salt.

3. In a separate bowl, combine the melted butter, honey, eggs, and milk. Mix well.

4. Pour the wet ingredients into the dry ingredients and stir just until combined, being careful not to overmix.

5. Spoon the batter evenly into the prepared muffin cups, filling them about 3/4 full.
