Description

Tender sweet potatoes and juicy sausage coated in a sweet and savory honey garlic glaze – a cozy, comforting dish that’s perfect for busy weeknights.


Ingredients

– 2 lbs sweet potatoes, peeled and cubed

– 1 lb honey garlic sausage, sliced

– 2 tbsp olive oil

– 3 cloves garlic, minced

– 1/4 cup honey

– 2 tbsp soy sauce

– 1 tsp dried thyme

– 1/2 tsp salt

– 1/4 tsp black pepper


Instructions

1. 1. Preheat oven to 400°F. Toss the sweet potato cubes with olive oil, salt, and pepper on a large baking sheet.

2. 2. Roast the sweet potatoes for 15 minutes, then add the sliced sausage to the baking sheet. Continue roasting for 10-15 minutes, until the sweet potatoes are tender and the sausage is cooked through.

3. 3. In a small bowl, whisk together the honey, soy sauce, and garlic. Pour the honey garlic sauce over the roasted sweet potatoes and sausage, and toss to coat.

4. 4. Sprinkle the thyme over the top and return to the oven for 5 more minutes to allow the sauce to caramelize.

5. 5. Serve hot, garnished with additional fresh thyme if desired.

Notes

For a spicier version, add a pinch of red pepper flakes to the honey garlic sauce. This dish can also be made with other types of sausage, such as Italian or smoked.
