This easy-to-make dish combines the sweetness of roasted acorn squash with the creaminess of goat cheese and the tartness of a cranberry drizzle, creating a perfectly balanced and comforting fall meal.


Ingredients

– 2 medium acorn squash, halved and seeded

– 2 tablespoons honey

– 1/4 cup crumbled goat cheese

– 1/4 cup cranberry sauce

– 1 tablespoon olive oil

– 1 teaspoon salt

– 1/2 teaspoon black pepper


Instructions

1. 1. Preheat your oven to 400°F (200°C).

2. 2. Brush the cut sides of the acorn squash halves with olive oil and season with salt and pepper.

3. 3. Place the squash halves, cut-side down, on a baking sheet lined with parchment paper.

4. 4. Roast the squash for 25-30 minutes, or until tender and caramelized.

5. 5. Remove the squash from the oven and brush the cut sides with honey.

6. 6. Top each squash half with a generous amount of crumbled goat cheese.

7. 7. Return the squash to the oven and bake for an additional 5 minutes, or until the cheese is slightly melted.

8. 8. Drizzle the warm cranberry sauce over the top of the honey-glazed acorn squash.

9. 9. Serve immediately and enjoy!

Notes

For a variation, you can sprinkle toasted pecans or walnuts over the top of the dish for added crunch. The cranberry sauce can be homemade or store-bought. If you prefer a sweeter taste, you can increase the amount of honey used.
